Balancing Acid Levels in your Wine
One important, and often overlooked, step to home winemaking is the balancing of acids in your juice. Kit wines do not need this done as it has been done at the manufacturer’s processing plants. This is only applicable if you are making wine from fresh fruits and juice. If this is not done, the results could be a sharp, puckering flavor in wine that is too acidic.
Balancing your juice’s acid levels is easy and should be done prior to fermentation. All it requires is Sodium Hydroxide, a phenol indicator solution and a 15cc syringe to test your levels. Acid Blend is required to raise them, calcium carbonate to lower.
